Raw Vegan Meals for Under $1

I’m so excited to share some recipes you guys have asking about for a long time! I’ve covered raw vegan recipes, and affordable vegan recipes, but today I’m combining the two. Read on to learn three delicious, raw, vegan recipes you can make for under $1 each!

1. Lettuce Tacos

Ingredients:
3 roma tomatoes
1/4 avocado
1/2 cup red onion
2 carrots
5 lettuce leaves (iceberg or romaine)
1 cup spinach
1/2 cup corn
1 lime
pink Himalayan salt
crushed black pepper
turmeric powder (optional)
cayenne powder (optional)

Method:
Slice the tomatoes and avocado. Thinly slice the red onion. Shred the carrots.
Lay your lettuce leaves out flat on a large plate or tray. Top them with the spinach, sliced tomatoes, shredded carrots, corn, sliced red onion, and sliced avocado.
Juice the lime over the topped lettuce leaves.
Sprinkle with salt, pepper, turmeric powder, and cayenne powder to taste (or use your favorite seasonings!).

2. Fruit Salad

Ingredients:
2 apples
1 grapefruit
2 cups watermelon
2 oranges

Method:
Core the apples, then cube them. Put most of the cubes into a bowl.
Supreme the grapefruit. Add the segments to the bowl with the apple cubes.
Cut the watermelon into cubes the same size as the apple pieces. Add most of them to the fruit bowl.
Supreme the oranges and put them in the bowl. Top with the remaining apple and watermelon cubes, and enjoy!

3. Cauliflower Ceviche

Ingredients:
1/2 head cauliflower
2 roma tomatoes
1/2 cup red onion
2 tablespoons cilantro
1 serrano pepper
2 limes

Method:
Roughly chop the cauliflower. Put it into a large bowl.
Dice the tomatoes and finely dice the onion. Mince the cilantro and serrano pepper.
Mix all the prepared ingredients into the bowl with the cauliflower. Juice the limes over the mixture, and stir well to combine.

PRICES:
Cauliflower: $0.55 per pound
Carrots: $0.77 per pound
Lettuce (iceberg): $0.99 per pound
Tomatoes (roma & plum): $1.75 per pound
Corn: $0.70 per cup
Red onions: $0.28 per pound
Watermelon: $0.17 per cup
Limes: $0.17 each
Cilantro: $0.50 per bunch
Serrano pepper: $0.21 each
Grapefruit: $0.52 per pound
Oranges: $0.97 per pound
Apples: $1.15 per pound
Spinach: $0.50 per cup, $2 per bunch

Depending on where you live and the time of year, prices might be lower or higher than what you see listed here. Don’t feel stuck with these recipes! Instead, go ahead and play around with them based on your preference and the cost of ingredients. For example, if lemons are half the price of limes, you can substitute lemon juice for lime juice.

I was completely raw vegan for over three years, and with these recipes, I feel like I’m going back to the roots of Rawvana. Now that I eat cooked foods again, I still love eating a ton of raw foods. Even if you’re not vegan or vegetarian, you should absolutely incorporate more raw fruits and vegetables into your diet and see what a difference this simple change can make.
