Three $1 Meals

Many of you are students who need to save money. You’ll be glad to hear it doesn’t need to be expensive or extravagant, so you can be healthy AND save for that big backpacking trip! Here are three vegan meals you can make for around a dollar (or less) each!

1. Bean and Rice Bowl

Ingredients:
1 cup canned beans (15 ounce can = $0.50, so 1 cup of beans = $0.25)
1 cup cooked white rice (1 pound of uncooked rice = $0.69, so 1 cup of cooked rice = $0.11)
cumin to taste
salt and pepper to taste
1/2 broccoli crown (1 pound = $0.99, so 1 crown = $0.25 and 1/2 crown = $0.12

Salsa (optional):
1/2 tomato (1 pound of tomatoes = $0.69, so 1 tomato = $0.17 and 1/2 tomato = $0.08)
1/4 white onion (1 pound of white onions = $0.59, so 1 white onion = $0.14 and 1/4 white onion = $0.03)

Total Cost: $0.59

Method:
Put the beans and rice in a bowl, side by side. Season with cumin, salt, and pepper to taste.
Optionally, dice the tomato and onion, and mix together. Add cumin, salt, and pepper to taste, then top the beans and rice with this salsa.
Cut the broccoli into bite-sized pieces and either steam it or saute it, using a little bit of water instead of oil. Serve as a side to the bowl. Enjoy!

Tip:
To change things up, substitute lentils for the beans!

2. Banana Cereal

Ingredients:
2 bananas ($0.40)
2 cups water
1 apple ($0.34)
cinnamon powder to taste

Total Cost: $0.74

Method:
Blend one banana with two cups of water. Just like that, you have banana milk!
Pour your banana milk into a bowl.
Slice the banana dice the apple, and decorate the banana milk with the fresh fruit. Sprinkle with cinnamon powder to taste.

3. Potato and Bean Tacos

Ingredients:
1 potato (1 pound of potatoes = $0.59, so 1 potato = $0.29)
3 corn tortillas ($0.30)
1 cup canned beans (15 ounce can = $0.50, so 1 cup of beans = $0.25)
1/4 bunch parsley (1 bunch parsley = $0.50, so 1/2 bunch parsley = $0.25 and 1/4 bunch parsley = $0.12)
cumin to taste
salt and pepper to taste

Total Cost: $0.96

Method:
Boil the potato until fork-tender. Mash the potato.
Heat three corn tortillas, either in the microwave or in a pan on the stove.
Top each of the three warmed tortillas with a third of the mashed potato. Close the tortillas.
Heat the black beans with some water, then mash them. Season with cumin, salt, and pepper to taste.
Pour the mashed black beans over your three tacos. Top with parsley.

Eating like this is so much easier on your wallet than eating meals based on expensive foods like meat and dairy. To save even more money, remember to buy in bulk. This means stocking up on staples like rice, beans, and lentils. You can also save money by making your own milk at home! I even have a video showing you how to make five plant-based milks. Best of all, eating simple, plant-based foods isn’t only easier on your wallet; it’s also easier on your body.
